What is Tip Pooling?
Tip pooling means that the tips employees earn in a shift are pooled and then divided rather than each person keeping what landed in their own hands. It makes sense when you think about how a restaurant actually works. One server might get a generous tip from a big table, while another works just as hard but ends up with less by the end of the night. Pooling levels that out.
Who's included usually comes down to the job. Servers, bartenders, hosts, sometimes bussers. Managers and owners are generally left out, even if they jumped in to help during a rush, and there are real legal reasons for that line. Kitchen staff can sometimes be added to the mix too, but that depends on other factors like whether the business is taking a tip credit, so it's not a safe assumption to make on your own.
Once you're running more than one shift or more than one location, keeping the pool fair gets harder than it sounds. That's usually why payroll software ends up doing the heavy lifting, splitting tips accurately and folding them into paychecks automatically instead of someone tracking it by hand. A written policy helps too. Staff tends to trust the system more when they know exactly how it works.
